Ratatouille

Inspired by the movie of the same name, this dish is hearty vegetable stew, the kind of thing you would eat on a rainy day. It brings a smile to your face as the steam rises and warms your soul.

 

Ingredients:

  • Mushrooms
  • Shallots
  • Capsicum
  • Zucchini
  • Eggplant
  • Canned Diced/Peeled Tomatoes (Depends on your preference)
  • Black pepper
  • Garlic
  • Thyme

Method:

  1.  Dice all the vegetables into cubes
  2. Poor olive oil into a pan and pan fry the shallots
  3. Once the shallots are browned, add the capsicum, zucchini and eggplant.
  4. Finally once all of these are cooked to your liking (I like them soft, some like them a bit crunchy), add the mushrooms.
  5. Spice up the dish by adding the pepper, garlic and thyme.
  6. Last poor in the can of tomatoes. (Personally I love eating peeled whole tomatoes in my dishes as they explode with flavour when you bite into them, I used diced as that is my partners preference).
  7. Simmer for 10 minutes and serve.
  8. Alternatively you can slice vegetables into thin pieces and layer them in a tray, poor canned tomatoes on top then bake in the oven until cooked.

Bacon Pancakes with Phili Spread

This months creation is inspired by Adventure time. It’s “Bacon Pancakes” and it’s really simple to make. You can go two ways with these, savoury or sweet. I chose the savoury path as we were going to eat these for dinner. However I do think the intention of these pancakes it to be “naughty” make them sweet and use sweet condiments to go with them (ie. Maple syrup and ice cream).  I was going to make them with a shake and bake pancake mix, but I had too many eggs in my fridge so decided to make it from scratch. Ingredients

  • 2 Eggs
  • 1 1/2 Cups of Milk
  • Your favourite herb mix (for savoury pancakes)
  • 2 Cups of Self Raising flour
  • Honey/Caster Sugar
  • Bacon
  • Philadelphia Spread (or your favourite toppings)

Method

  1. In a jug bowl beat eggs, milk and herbs together.
  2. In a mixing bowl, pour two cups of flour. Create a well in the center and add the egg/milk mixture.
  3. Mix together, add honey, continue to mix until combined.
  4. In a fry pan cook strips of bacon.
  5. Once the bacon is cooked, remove from pan.
  6. Use the bacon grease as the oil for your pancakes to cook. Pour a small amount of mixture onto the fry pan.
  7. Place bacon strips onto your pancake.
  8. Once air bubbles are produced flip pancake.
  9. Check the pancake is cooked on both sides and then plate up.
  10. Add your toppings and enjoy!

Aussie Krusty Burger

Inspired by the famous burger of The Simpsons, this is an Aussie twist on the “Krusty Burger”. I also made a blue “Krusty Shake” and some sweet potato chips to go with the burger, but really you could have anything you like to accompany your main dish. Ingredients:

 

  • Kangaroo Patties
  • Bacon
  • Brioche Buns
  • Swiss Cheese
  • Onions
  • Pickles
  • BBQ Sauce
  • Mustard

 

Method:

  1. Cook the Kangaroo patties, bacon and onions in a fry pan
  2. Lightly toast the brioche buns
  3. Assemble the burger in any order you choose
  4. Serve with your favorite drink and sides!
